You wake up one morning and make yourself a cup of coffee while thinking everything is going to go very smooth today. Your laundry is caught up, the dishes are done, you checked the calendar and everything is on track for anice normal day.

You take a moment to pat yourself on the back for being so organized and then it hits you! You remember you promised to make cookies for a friends birthday and they need to be deliveredby noon! YIKES! No time to panic! You need to do something now! Why not make some simple delicious lemon crinkle cookies? You can have them done before you finish that first cup of coffee!

All you need is a box of lemon cake mix (you should always keep at least one box of lemon cake mix in your cabinet in case of emergencies like this one), an egg and an 8 ounce container of cool-whip. Before you know it you can make a batch of the best lemon crinkle cookies you have ever tasted!

Ingredients

  • 1 Box of Lemon Cake Mix
  • 1 egg
  • 1 – 8 ounce container of Cool-Whip
  • 1/2 cup of powdered sugar for rolling the cookie dough
  • Baking sheet
  • Parchement paper or a Silpat

Instructions

  • Preheat oven to 350°.

  • Place the lemon cake mix, egg and cool-whip in a bowl and mix with a fork or spoon until well blended. Be careful not to over mix.

  • Freeze the cookies for about 2-3 minutes before you roll them in the powdered sugar.

  • Roll them in the powdered sugar and place them onto a baking sheet lined with parchment paper or a Silpat.

  • Bake in a 350° oven for 8-10 minutes.

  • Preheat oven to 350° while you prepare the cookie batter.

  • Begin by placing the lemon cake mix, egg and cool-whip in a bowl.

  • I like to freeze the cookies for about 2-3 minutes before I roll them in the powdered sugar. It doesn’t take very long because all you want to do is freeze them slightly so the dough doesn’t stick to your fingers.
